I couldn’t believe I was at an event with ~1000 other tourism professionals in Las Vegas less than 24hrs after a late-night wedding. But alas, worked called, and I barely made it on my flight… no thanks to Delta delaying my flight 30 minutes, only to change its status to “on time” 90 minutes before departure, causing me to rush to the airport.

Here I was, at the new Resorts World nightclub, which had opened 3 days earlier, having drinks with coworkers and catching up with colleagues I hadn’t seen in quite some time, with the typical Vegas party atmosphere you’d expect to see.

Between the time difference, lack of sleep, and late-night shenanigans from the wedding, coupled with the need to be on-site at 745am the next day to be part of the keynote presentation, I didn’t feel like staying out late. I was hungry, Laura agreed, and so we went back to the hotel to find dinner among the countless options available within walking distance of the Linq.

Laura’s first choice was a solid one: In n Out. But I had literally gone there for lunch, so we explored other menus and settled on Favorite Bistro. The wide open indoor dining, which was basically outdoors, provided the airy feel we were looking for… you know, being in Las Vegas during covid.

Exhausted yet exhilarated, there was only one meal that would set the right tone to this evening meal: a club sandwich.

Laura and I caught up, shared work stories, mulled over the Gabby Petito murder mystery that was currently captivating America, and waited for our meals to arrive. Great conversation, and I just hoped the club sandwich would round out the evening.

Heaping and plated to show itself off, the Club Sandwich from Favorite Bistro was showy with little substance – perhaps an homage to Vegas itself? I could barely see over my plate to Laura’s meal, my club sandwich taking up the view. No ingredients stood out, but this was a big meal that would leave the hungriest of patrons both satisfied as well as longing for more… another Vegas homage.

We enjoyed dinner, and I went back to my hotel room to literally crash, looking forward to tomorrow and a full day of conferencing.
