The ride up to northern New Hampshire is quite the scenic one, as the highway goes from four lanes to one, and the path weaves in and around trees, valleys, and mountains, taking you into the heart of New England.

It’s a ride I took many, many times during the winter, but a trip I have seldom taken in the summer months. And as majestic as it might be to see the view pass by covered in snow, I was more than content taking in the intense shades of green that enveloped us over every curve and bend.

Our destination: The Omni Mount Washington at Bretton Woods. The scenic views only started during the ride up, where they then exploded with fantasy as we arrived at Bretton Woods. Everything about this destination screamed remote New England, including the gorgeous smell of the wind blowing through the pine trees. This. Was. Vacation!

We decided to stick with the scenic theme, and we chose dining outside at the golf clubhouse on our first day at the Omni. With stunning views of Mount Washington in front of us, and cool, crisp breezes blanketing us in the warm summer sun, it felt like the perfect choice for the perfect day.

Trevor would have the chicken quesadilla, I would have the club sandwich, and my mom would share what was left uneaten.

Hearty, meaty, intense layers of bacon supercharged this club sandwich. The toasted sourdough was on the thicker side and a bit overbearing, but it didn’t stand a chance next to this sliced and salt cured pork belly. The bread could have been helped a bit by the herbed mayonnaise, but there simply wasn’t enough on it to add the oomph a flavor and moisture necessary. The turkey, as decent as it was, almost felt like an additive to the bacon – and I wasn’t complaining.

We enjoyed every bite of our meal, basking in the glory of New Hampshire, and I couldn’t help but think to myself: I need more New England in my life.
